Fruit Tart with Cream, Berries and Mint Leaves

I made this summer tart with a crisp butter crust, filled with homemade custard — light, creamy and full of vanilla flavour. On top I added strawberries, kiwi and raspberries, with a few mint leaves for a fresh, fragrant touch. Bright, juicy and colourful — perfect to enjoy chilled and share in good company.

Ingredients

For the tart crust: unsalted butter, plain flour, fresh eggs, sugar (just enough), natural vanilla, a pinch of salt

For the cream: fresh eggs, milk, cornstarch (or fine corn flour), sugar, natural vanilla, a pinch of salt

Topping: fresh seasonal fruit (e.g. strawberries, kiwi, raspberries), mint leaves
